Study Reveals Critical Thickener Concentration in Emulsions

A paper published online ahead of print in Chemical Engineering Science used a multiscale approach to study the dynamics of emulsions at various scales.

Here, o/w emulsions were created at different concentrations using different thickeners. Relationships between rheology and texture were then observed.

The thickener type was found to determine the emulsion's rheology and texture. In addition, a critical thickener concentration was identified whereby the polymer concentration showed insignificant differences in macroscopic and microscopic emulsions.
